Salami pitta pizza

In the mood for pizza? These tasty pitta versions will be ready in a flash
Ingredients
- 1/2 x 210g ball Co-op Italian lighter mozzarella, torn or thinly sliced
- 4 Co-op wholemeal pittas
- 100g Co-op Italian passata
- 40g Co-op British lighter grated mature cheese
- 40g Co-op Milano salami, torn or sliced into strips
- 40g Co-op British baby button mushrooms, sliced
- 115g bag Co-op baby leaf salad
- 1 spring onion, thinly sliced
- 225g pack Co-op Irresistible cherry tomatoes, halved
- 1 tsp Co-op extra virgin olive oil
- 1 tsp Co-op white wine vinegar
- Small handful basil, leaves only
Method
- Preheat the oven to 220°C/fan 200°C/ gas 7
- Line a large baking tray and lay the mozzarella on kitchen paper to dry
- Place the pitta breads on the lined tray and spread with the passata
- Scatter with the grated cheese, salami, mushrooms and mozzarella
- Bake for 10-15 mins, until the cheese is bubbling and golden
- Meanwhile, toss the salad leaves with the spring onion, cherry tomatoes, oil and vinegar, then season
- Scatter the pizzas with basil leaves and serve alongside the salad
