Pea, mint and chickpea hummus

Serves 8 as a dip - Ready in 15 minutes


A tempting, vegetarian bite-sized dip or appetiser! Serve with your choice of crackers or crispy raw vegetable sticks



  1. 1 x 545g frozen petit pois (cooked and drained)
  2. 1 x 25g pack Co-op fresh mint (washed and chopped finely)
  3. 4 cloves crushed fresh garlic or 1 tsp Bart garlic paste
  4. Juice of 1 lemon
  5. 1 x 242g Co-op tinned chickpeas (drained and rinsed)
  6. 2 tbs Co-op Irresistible rapeseed oil
  7. Salt to taste


  1. Place well drained cooked peas, mint, garlic and lemon juice in a food blender and blitz for a few minutes. Add the oil.  Blitz again
  2. Add the chickpeas and blitz again until the required consistency, add salt to taste
