GRO - Vegan Chilli

Feeds 4-8 people - Ready in 50 minutes

Ingredients

  • 1 large onion, finely diced

  • 2 garlic cloves, finely chopped

  • 2 red peppers, roughly chopped

  • 2 sticks celery, sliced

  • 2 medium carrots, peeled and sliced

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 1-2 tsp chilli powder

  • 450-500g GRO mince

  • 3 veg stock cubes (Jude used Kallo)

  • Salt and pepper to taste

  • 125ml red wine or boiling water (Jude Used Casillero Del Diablo Merlot)

  • 1-2 tbsp tomato puree

  • 1-2 tsp sugar

Method

  1. Fry the onion in a little oil until soft

  2. Add the celery, carrot, pepper and spices and fry for a further 5-10 mins

  3. Add garlic and fry for 1 min more

  4. Add rest of ingredients, bring to the boil then leave to simmer for around 20-25 mins, stirring occasionally.

  5. Serve with jacket potato, baked sweet potato or in a wrap with vegan sour cream or topped with vegan cheese.
