GRO - Vegan Chilli
Feeds 4-8 people - Ready in 50 minutes
Ingredients

1 large onion, finely diced

2 garlic cloves, finely chopped

2 red peppers, roughly chopped

2 sticks celery, sliced

2 medium carrots, peeled and sliced

2 tsp ground cumin

2 tsp ground coriander
-
1-2 tsp chilli powder

450-500g GRO mince
-
3 veg stock cubes (Jude used Kallo)

Salt and pepper to taste

125ml red wine or boiling water (Jude Used Casillero Del Diablo Merlot)

1-2 tbsp tomato puree

1-2 tsp sugar
Method

Fry the onion in a little oil until soft

Add the celery, carrot, pepper and spices and fry for a further 5-10 mins

Add garlic and fry for 1 min more

Add rest of ingredients, bring to the boil then leave to simmer for around 20-25 mins, stirring occasionally.

Serve with jacket potato, baked sweet potato or in a wrap with vegan sour cream or topped with vegan cheese.
