Co-op Irresistible Fairtrade Chocolate Mousse

A delicious, chocolate-y dessert - perfect to impress friends and family! As seen at the Fairer Living Festival.



  • 180g Fairtrade Co-op Irresistible dark chocolate (1 bar = 100g)
  • 25g butter
  • 5 eggs (separated)
  • 3-4 tablespoons caster sugar
  • 150ml double cream and extra for decoration and a little grated chocolate


  1. Put the chocolate and butter in a heatproof bowl set over a pan of barely simmering water. Push the chocolate and butter gently down with a wooden spoon to help it melt but avoid stirring. Once three-quarters of the butter and chocolate have melted, remove the bowl from the heat. Stir until melted, smooth and glossy. Set aside until lukewarm.
  2. Whisk the egg whites to soft peaks, then gradually add the sugar, whisking, until stiff peaks form.
  3. Whisk the double cream to soft peaks.
  4. Working quickly, use a spatula to stir the egg yolks into the chocolate mixture.
  5. Gently fold the egg whites and cream into the chocolate mixture, being careful not to knock out the air bubbles. Pour into wine or dessert glasses and chill for a couple of hours or overnight to set.
  6. When ready to serve, whip the extra cream and pipe a swirl on top and decorate with chocolate shards or grated chocolate.
