Antipasti Bites

These speedy bites are perfect for a picnic or party

Ingredients

  • 100g pack Co-op German style salami
  • 500g cherry tomatoes, quartered
  • 3 x 125g packs Co-op mozzarella, diced
  • Basil leaves, to garnish

Method     

  1. Preheat your oven to 200°C/fan 180°C/gas 6
  2. Line 10 holes of a 12-hole muffin tin with a slice of salami in each
  3. Press the salami into the bottoms and sides to form a cup-shape
  4. Bake for 7-10 mins, or until crisp, then allow to cool
  5. Mix the tomatoes and mozzarella and season
  6. Once the salami cups are cool, fill with the tomato and mozzarella mix, and garnish with the basil to serve
