Buddha Bowls

Ingredients:

  • 150g Co-op British broccoli florets, halved if large

  • 1 tsp Co-op olive oil

  • 30g kale, shredded

  • 100g brown rice

  • 100g Co-op frozen peas

  • 1 cooked beetroot, sliced

  • 1/2 Co-op British carrot, grated

  • Juice of 1/2 lemon

  • 100g Co-op reduced fat houmous

Directions:

  1. Preheat the oven to 180°C/fan 160°C/Gas 4

  2. Toss the broccoli in the oil and tip onto a baking tray Season, then roast for 15 mins, adding the kale for the last 5 mins

  3. Meanwhile, cook the rice according to the pack instructions, adding the peas for the last 3-4 mins

  4. Layer the salad in a serving bowl along with the beetroot and carrot

  5. Add the lemon juice to the houmous and stir to loosen, then drizzle over the salad to serve
