Vanilla Ice-cream with Cold-brew
This dessert, also called affogato, is an Italian classic.
Serves 4, Ready in 15 Minutes
Ingredients
- 3 heaped tbsp Co-op Fairtrade French style roast & ground coffee
- 400ml Co-op Irresistible clotted cream vanillaice cream
- 2 tbsp chopped hazelnuts
- 2 Co-op shortbread fingers, crumbled
Method
- The night before you make this, put the coffee in a jug, pour over 200ml cold water and leave in the fridge to brew overnight
- Before serving, pour through a coffee filter into a saucepan and heat gently
- Don’t let it boil
- Scoop the vanilla ice cream into 4 bowls and pour over the warm coffee
- Sprinkle over the hazelnuts and shortbread, then serve immediately
- Alternatively, give each person a small jug of hot coffee so they can serve themselves at the table
