Mustard Slaw Burger
Bite into this crunchy, juicy combo from Co-op.
Serves 8, ready in 35 minutes
Ingredients
- 8 Co-op Irresistible Hereford beef burgers
- 16 onion rings
- 1/2 Co-op British white cabbage, shredded
- 2 Co-op British carrots, grated
- 1 red onion, thinly sliced
- 1 apple, cut into matchsticks
- 1 Co-op pickled gherkin, sliced
- 100g Co-op 0% fat Greek style natural yogurt
- 3 tbsp light mayonnaise
- 1 tbsp wholegrain mustard
- Juice 1/2 lemon
- Handful flat leaf parsley, chopped
- 8 Co-op brioche buns
- Co-op rocket leaves
- 2 tomatoes, sliced
Method
- Cook the burgers and onion rings according to the pack instructions
- Meanwhile, season and toss together the white cabbage, carrots, red onion, apple and sliced gherkin
- Mix the yogurt, mayonnaise, mustard and lemon juice
- Stir into the veg, along with the parsley
- Load the buns with a few leaves of rocket, 3 slices tomato, a beef burger, 2 tbsp slaw and 2 onion rings
