Chocolate Cinnamon Sponge
Serves 10, Ready in 2 Hours 15 Minutes
This easy pudding, using Co-op Fairtrade chocolate, is a real treat
Ingredients
- 125g Co-op unsalted butter, plus extra for greasing
- 250g Co-op self raising flour
- 2 tsp cinnamon
- 75g Co-op Fairtrade cocoa powder
- 300g soft light brown sugar
- 175ml Co-op whole milk
- 4 Co-op British free range eggs
- 135g bar Co-op Fairtrade dark chocolate, roughly chopped
- Serve with 10 scoops Co-op Irresistible Madagascan vanilla ice cream (optional)
Method
- Grease your slow cooker
- Sieve the flour into a large bowl with the cinnamon and 50g of the cocoa powder
- Stir in 150g of the sugar, breaking up any lumps as you go
- Whisk the milk and eggs together in a jug
- Melt the butter over a low heat in a small saucepan, then add to the milk and egg mixture
- Pour the liquid over the dry ingredients and whisk for 1-2 mins, until you have a thick, smooth batter
- Fold the chopped chocolate into the batter, then pour into the slow cooker
- Mix the remaining cocoa powder and sugar with 300ml boiling water and pour over the top of the batter
- Cook on high for 1 hour 45 mins to 2 hours, until the sponge has risen and is firm
- Serve with a scoop of ice cream, if you like
