Crunchy Cereal Ice-cream

Corn flakes add crunch to this easy no-churn ice cream recipe.

Ingredients

  • 400ml Co-op semi-skimmed milk
  • 500ml Co-op double cream
  • 150g Co-op golden nut corn flakes, plus extra to serve
  • 397g can condensed milk

Method

  1. Pour the milk and cream into a saucepan, heat gently, then take off the hob and add the corn flakes
  2. Leave to soak for around 1 hour, so the cereal flavour has time to infuse
  3. Pour the mixture through a sieve and press down gently with a spoon to squeeze the flavour out of the corn flakes — take care not to push them through the sieve, though
  4. Using an electric whisk, beat the condensed milk into the cream mixture, then spoon into a 1-litre loaf tin
  5. Cover with cling film and freeze for at least 8 hours until set
  6. Remove the ice cream from the freezer 5 mins before serving, then serve sprinkled with extra corn flakes
